If you want to change the font color for Photoshop, you can change the font to an image file by using the command Right-click on the layer and select Rasterize Type, then change the color by pressing Ctrl+U and clicking on Colorize. After that, you can change the color as you want.

For Illustrator, select the font you want to change color, select Object, -> Rasterize, set Resolution High (300 dpi) and select Transparent, then click OK, and then select Edit -> Edit Colors -> Adjust Colors.
